1)  Pumpkin Pie Spice Smoothie

Ingredients

  • 3 tablespoons       pumpkin puree (45 g)     clickhere_blue25
  • 1 cup                     unsweetened almond milk or regular milk
  • 1 cup                     ice
  • 1 teaspoon            vanilla extract   vanilla_extract_transp50
  • 1 teaspoon            ground cinnamon   Cinnamon-Ground-McCormick_transp25
  • 1/2 teaspoon         ground nutmeg  
  • 1/2 teaspoon         all spice

Direction
Combine all the ingredients in a blender and pulse until smooth.

 

2)  Iced Pumpkin Spice Latte

Ingredients

  • 2 cups          milk
  • 4 tbsp           canned pumpkin puree (OR fresh pumpkin puree) (60 g)
  • 2 tbsp           sugar (25 g)
  • 2 tbsp           vanilla extract (25 g)
  • 1/2 tsp          pumpkin pie spice   clickhere_orange25

1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if without an espresso machine.)

Direction

1.  For Iced
Brew coffee or espresso and let it sit out for a few minutes until it reaches room temperature.  Alternatively put it in fridge or freezer to speed up cooling process.

  • In a saucepan combine milk, pumpkin and sugar and cook on low heat, stirring, just until the sugar and pumpkin are dissolved.
  • Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy
  • If without blender – just whisk the mixture really well with a wire whisk.
  • Pour into a cup filled with ice.  Then add espresso or coffee on top.
  • Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.

2.  For Hot

  1. In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming
  2. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy
  • If without blender – just whisk the mixture really well with a wire whisk.
  • Pour into a large mug or two mugs.  Add the hot espresso or coffee on top. 
  • Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.
