Pumpkin drinks for Fall and Winter

 

1)  Pumpkin Pie White Hot Chocolate

Serving 4

Ingredients

  • 3 cups     milk
  • 1 cup       canned pumpkin puree/fresh prepared puree (220 g)   clickhere_green25
  • 1/2 tsp     ground cinnamon   Cinnamon-Ground-McCormick_transp25
  • 1/4 tsp     ground ginger   ground_ginger_transp8
  • 1/8 tsp     ground cloves   ground_cloves_transp28
  • 1/8 tsp     ground nutmeg   ground_nutmeg_transp60
  • 1 tsp        vanilla extract   vanilla_extract_transp50
  • 35 g         white chocolate, chopped    white_chocolate_transp40
  • pinch salt

Directions

  1. In a medium saucepan, stir together the milk, pumpkin and spices and heat over medium heat just until the mixture begins to simmer.
  2. Remove from heat and add in the chopped white chocolate and stir together until completely melted and fully incorporated.
  3. Pour the mixture in a blender
  4. Pour the blended mixture into mugs and top with whipped cream and sprinkle with cinnamon if desired.

Notes

  • 1 teaspoon ground cinnamon = 3 grams
  • 1 teaspoon ground ginger = 5 grams
  • 1 teaspoon ground cloves = 2.4 grams
  • 1 teaspoon ground nutmeg = 2 grams

2) Pumpkin Chai Latte

Ingredients

  • ¼ cup + 1 tablespoon     pumpkin puree (75 grams) 
  • 2 tablespoons                  maple syrup or honey (42.5 g)
  • 1½ teaspoons                 vanilla extract
  • 2 x ¼ teaspoon               ground cinnamon
  • ⅛ teaspoon                     ground nutmeg
  • ⅛ teaspoon                     allspice
  • ⅛ teaspoon                     ground ginger
  • 2 cups                             milk
  • 2 bags                             black tea

Directions

  1. In a small saucepan, bring all the ingredients, except for the tea bags, to a boil over medium heat.
  2. Remove the saucepan from the heat, add the tea bags, and let the tea bags steep for 3 minutes (or as the instruction says).
  3. Sprinkle with some cinnamon before serving if preferred

Remark
You can replace the different spices with pumpkin pie spice.  Use ½ + ⅛ teaspoons.

3)  No Coffee Pumpkin Latte

Makes 4 servings

Ingredients

  • 1 cup                pumpkin puree (220 g)
  • 1 quart              milk (950 ml)
  • 1/4 cup             white sugar (50 g)
  • 1 teaspoon       ground cinnamon
  • 1 tablespoon    vanilla extract

Directions

  1.   Combine pumpkin, milk, sugar, cinnamon, and vanilla in a large saucepan over medium heat
  2.   Use a whisk to blend well
  3.   Heat to a simmer; do not boil

 

4)  Pumpkin Spice Latte (Vegan)

Makes 2 cups

Ingredients

  • 1 cup                    homemade almond milk (OR regular milk)
  • 1 cup                    hot brewed coffee
  • 2 tablespoons      pumpkin puree (27.5 g)
  • 2 tablespoons      pure maple syrup, or stevia to taste (OR honey) (42.5 g)
  • 1/2 teaspoon        pumpkin pie spice     clickhere_orange25

Directions
Combine all of the ingredients in a high-speed blender and blend until smooth and creamy.

 

5)  Warm Pumpkin Spice Drink

Ingredients

  • 1 cup                        whole milk, heated until very warm
  • 1/4 cup                     pumpkin puree (55 g)
  • 1 tablespoon            sugar (14 g)
  • 1/2 teaspoon            pumpkin pie spice
  • 1 teaspoon               pure vanilla extract
  • Whipped cream, optional
  • Cinnamon, optional

Directions

  1. Place all ingredients in blender
  2. Remove center cap from the lid of the blender and use a folded kitchen towel to loosely hold the cap over the hole in a manner that steam can escape
  3. Turn on the blender to low and then increase it to high
  4. Blend ingredients until frothy
  5. Transfer mixture to a mug, top with whipped cream, if desired
  6. Sprinkle with additional pumpkin pie spice or cinnamon.
